Ingredients

  • 1 lb shrimp, peeled and deveined
  • 2 cups diced tomatoes
  • 1/2 cup diced red onion
  • 1/4 cup chopped cilantro
  • 1 jalapeno pepper, seeded and minced
  • 2 tablespoons lime juice
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Tortilla chips, for serving

Instructions

  1. In a large bowl, combine the shrimp, diced tomatoes, red onion, cilantro, jalapeno pepper, lime juice, and olive oil. Mix well.

  2. Heat a skillet over medium-high heat and cook the shrimp for 2-3 minutes on each side until they turn pink and opaque.

  3. Remove the shrimp from the skillet and let them cool for a few minutes.

  4. Once cooled, chop the shrimp into small pieces and add them back to the salsa mixture. Stir to combine.

  5. Season with salt and pepper to taste.

  6. Serve the shrimp salsa with tortilla chips and enjoy!
