  • 4 salmon fillets
  • 2 tbsp olive oil
  • 1 tsp chili powder
  • 1 tsp cumin
  • Salt and pepper to taste
  • 8 small corn tortillas
  • 1 cup shredded lettuce
  • 1/2 cup diced tomatoes
  • 1/4 cup diced red onion
  • 1/4 cup chopped cilantro
  • 1 lime, juiced
  • 1/4 cup mayonnaise
  • 1 clove garlic, minced

Instructions

  1. Preheat the grill to medium-high heat.

  2. Rub the salmon fillets with olive oil, chili powder, cumin, salt, and pepper.

  3. Grill the salmon for about 4-5 minutes per side, or until cooked through.

  4. Warm the corn tortillas on the grill for about 30 seconds per side.

  5. In a small bowl, combine the lime juice, mayonnaise, and minced garlic to make the lime dressing.

  6. Assemble the tacos by placing a grilled salmon fillet on each tortilla.

  7. Top with shredded lettuce, diced tomatoes, diced red onion, and chopped cilantro.

  8. Drizzle with the lime dressing.

  9. Serve the salmon tacos with lime dressing and enjoy!
