Ingredients

  • 1 cup basmati rice
  • 200g smoked salmon, flaked
  • 1 onion, finely chopped
  • 2 garlic cloves, minced
  • 1 tsp turmeric
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp mustard seeds
  • 2 tbsp vegetable oil
  • 2 eggs, hard-boiled and sliced
  • 1 lemon, cut into wedges
  • Fresh coriander, chopped for garnish
  • Salt and pepper to taste

Instructions

  1. Cook the basmati rice according to package instructions and set aside.

  2. In a large pan, heat the vegetable oil over medium heat. Add the onion and garlic and cook until softened.

  3. Add the mustard seeds, turmeric, cumin, and coriander to the pan. Cook for another minute until fragrant.

  4. Add the flaked smoked salmon to the pan and cook for 2-3 minutes, stirring gently to combine everything together.

  5. Add the cooked rice to the pan and mix well, ensuring all the ingredients are evenly distributed.

  6. Season with salt and pepper to taste.

  7. Serve the kedgeree hot, topped with the sliced hard-boiled eggs, lemon wedges, and fresh chopped coriander.
