How To Make Quick and Easy Paella

Ingredients
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 cup diced tomatoes
- 2 cups chicken or vegetable broth
- 1 teaspoon smoked paprika
- 1/2 teaspoon saffron threads (optional)
- 1 cup Arborio or Valencia rice
- 1/2 pound chicken breast, diced
- 1/2 pound shrimp, peeled and deveined
- 1/2 pound mussels, cleaned and debearded
- Salt and pepper, to taste
- Fresh parsley, for garnish
- Lemon wedges, for serving
Instructions

In a large paella pan or skillet, heat the olive oil over medium heat. Add the onion and garlic, and cook until softened.

Add the bell peppers and cook for another 2-3 minutes, until slightly tender.

Stir in the diced tomatoes, broth, smoked paprika, and saffron threads (if using). Bring to a simmer.

Add the rice and chicken to the pan, and stir to combine. Cook for about 15 minutes, stirring occasionally.

Add the shrimp and mussels to the pan, and season with salt and pepper. Cook for an additional 5-7 minutes, or until the rice is tender and the seafood is cooked through.

Remove from heat and let the paella rest for a few minutes. Garnish with fresh parsley and serve with lemon wedges.
