How To Make Spicy Clam & Pork Paella

Ingredients

  • 2 cups of short-grain rice
  • 4 cups of chicken or vegetable broth
  • 1 lb of clams, cleaned
  • 1 lb of pork loin, diced
  • 1 onion, chopped
  • 4 cloves of garlic, minced
  • 1 red bell pepper, sliced
  • 1 tsp of smoked paprika
  • 1/2 tsp of cayenne pepper
  • 1 tsp of dried thyme
  • 1 tsp of salt
  • 1/2 tsp of black pepper
  • 2 tbsp of olive oil
  • Fresh parsley for garnish

Instructions

  1. In a large paella pan or skillet, heat olive oil over medium heat. Add diced pork and cook until browned, then remove from the pan and set aside.

  2. In the same pan, add onion, garlic, and bell pepper. Sauté until softened.

  3. Add smoked paprika, cayenne pepper, thyme, salt, and black pepper. Stir well to combine.

  4. Add rice and stir for a few minutes until coated in the spice mixture.

  5. Pour in the broth and bring to a boil. Reduce heat to low and let simmer for 15 minutes.

  6. Arrange clams on top of the rice, cover the pan, and cook for another 15 minutes or until the clams have opened.

  7. Remove from heat and let the paella rest for 5 minutes.

  8. Garnish with fresh parsley and serve hot.
