Ingredients

  • 400g prawns, peeled and deveined
  • 1 cup cashews
  • 2 onions, finely chopped
  • 3 garlic cloves, minced
  • 1 inch ginger, grated
  • 2 tomatoes, pureed
  • 2 green chilies, slit
  • 1 tsp turmeric powder
  • 1 tsp red chili powder
  • 1 tsp coriander powder
  • 1 tsp cumin powder
  • 1/2 tsp garam masala powder
  • 1/2 cup coconut milk
  • 2 tbsp oil
  • Salt to taste
  • Fresh coriander leaves for garnish

Instructions

  1. Heat oil in a pan and sauté onions until golden brown.

  2. Add minced garlic, grated ginger, and green chilies. Cook for a minute.

  3. Add tomato puree and cook until the oil separates.

  4. Add turmeric powder, red chili powder, coriander powder, cumin powder, and salt. Mix well.

  5. Add prawns and cook for 5 minutes until they turn pink.

  6. Add cashews and coconut milk. Cook for another 5 minutes until the gravy thickens.

  7. Sprinkle garam masala powder and garnish with fresh coriander leaves.

  8. Serve hot with steamed rice or naan bread.
