How To Make Mussels in Saffron Broth Recipe

Ingredients

  • 2 lbs of fresh mussels, cleaned and debearded
  • 1 cup of dry white wine
  • 1 cup of chicken broth
  • 1 small onion, finely chopped
  • 2 garlic cloves, minced
  • 1/4 tsp of saffron threads
  • 1/2 cup of heavy cream
  • Salt and black pepper to taste
  • Fresh parsley, chopped for garnishing

Instructions

  1. In a large pot, sauté onion and garlic until soft.

  2. Pour in white wine and chicken broth. Add saffron threads and simmer for 5 minutes.

  3. Add cleaned mussels and stir to coat them in the broth. Cover and simmer until the mussels have opened, about 5-7 minutes.

  4. Remove from heat and stir in heavy cream. Season with salt and black pepper to taste.

  5. Serve with fresh parsley on top.
