How To Make Seafood Paella

Ingredients

  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 1 red bell pepper, diced
  • 1 cup Arborio rice
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon saffron threads
  • 2 cups vegetable or seafood broth
  • 1 cup diced tomatoes (fresh or canned)
  • 1/2 cup white wine
  • 1/2 pound shrimp, peeled and deveined
  • 1/2 pound mussels
  • 1/2 pound clams
  • 1/2 pound squid rings
  • 1/2 cup frozen peas
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)
  • Lemon wedges (for serving)

Instructions

  1. Heat olive oil in a large, deep skillet or paella pan over medium heat.

  2. Add diced onion, minced garlic, and diced red bell pepper to the skillet. Cook until vegetables are softened, about 5 minutes.

  3. Add Arborio rice, smoked paprika, and saffron threads to the skillet. Stir well to coat the rice with the spices and sauté for 2 minutes.

  4. Pour in vegetable or seafood broth, diced tomatoes, and white wine. Bring to a boil, then reduce heat to low and cover the skillet. Simmer for 20 minutes or until the rice is cooked and has absorbed most of the liquid.

  5. While the rice is cooking, prepare the seafood. In a separate skillet, heat a tablespoon of olive oil over medium heat. Add shrimp, mussels, clams, and squid rings. Cook until seafood is cooked through and shells have opened, about 5 minutes. Discard any unopened shells.

  6. Once the rice is cooked, gently stir in the cooked seafood, frozen peas, and season with salt and pepper to taste. Cook for an additional 5 minutes to heat through.

  7. Remove the skillet from heat and let it rest for a few minutes.

  8. Garnish with chopped parsley and serve with lemon wedges on the side.
