How To Make Mussels in Red Curry Sauce
Succulent mussels soaked in a rich, spicy red curry sauce.

Ingredients
- 2 lbs mussels
- 1 can (14oz) of coconut milk
- 3 tbsp red curry paste
- 1 tbsp fish sauce
- 1 tbsp brown sugar
- 1 lime, juiced
- 1/4 cup chopped cilantro
- 2 tbsp vegetable oil
Instructions

Scrub mussels and remove beards, discarding any that are already open.

Heat oil in a large pot over medium heat. Add curry paste and cook for 2 minutes, stirring constantly.

Pour in coconut milk, fish sauce, and brown sugar. Bring to a simmer.

Add mussels to the pot and cover. Cook for 5-7 minutes, shaking the pot occasionally until all mussels are open.

Remove from heat and stir in lime juice and cilantro. Serve hot.
