How To Make Mussels in Red Curry Sauce

Succulent mussels soaked in a rich, spicy red curry sauce.

Ingredients

  • 2 lbs mussels
  • 1 can (14oz) of coconut milk
  • 3 tbsp red curry paste
  • 1 tbsp fish sauce
  • 1 tbsp brown sugar
  • 1 lime, juiced
  • 1/4 cup chopped cilantro
  • 2 tbsp vegetable oil

Instructions

  1. Scrub mussels and remove beards, discarding any that are already open.

  2. Heat oil in a large pot over medium heat. Add curry paste and cook for 2 minutes, stirring constantly.

  3. Pour in coconut milk, fish sauce, and brown sugar. Bring to a simmer.

  4. Add mussels to the pot and cover. Cook for 5-7 minutes, shaking the pot occasionally until all mussels are open.

  5. Remove from heat and stir in lime juice and cilantro. Serve hot.
