How To Make Mussels with Tomatoes & Chilli

Serves:

Ingredients

  • 2 pounds of mussels
  • 2 tablespoons of olive oil
  • 1 onion, diced
  • 3 cloves of garlic, minced
  • 1 red chilli, seeded and chopped
  • 1 can of diced tomatoes
  • 1/2 cup of white wine
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Clean the mussels by scrubbing their shells and removing the beards.

  2. In a large pot, heat the olive oil over medium heat.

  3. Add the diced onion and minced garlic, and sauté until they become translucent.

  4. Stir in the chopped chilli and cook for another minute.

  5. Add the diced tomatoes and white wine to the pot, and bring to a simmer.

  6. Season with salt and pepper to taste.

  7. Gently place the cleaned mussels in the pot and cover with a lid.

  8. Cook for about 5-7 minutes, or until the mussels open. Discard any mussels that do not open.

  9. Transfer the mussels and sauce to a serving dish, and sprinkle with fresh parsley for garnish.

  10. Serve immediately with crusty bread to soak up the delicious sauce.
