Ingredients
- 4 black cod fillets
- 1/4 cup white miso paste
- 2 tbsp mirin
- 2 tbsp sake
- 2 tbsp brown sugar
- 1 tbsp soy sauce
- 1 tbsp vegetable oil
Instructions

Preheat the oven to 400°F (200°C).

In a small bowl, mix together the miso paste, mirin, sake, brown sugar, and soy sauce.

Heat the vegetable oil in a large oven-safe skillet over medium-high heat.

Add the black cod fillets to the skillet, skin-side down, and cook for 3-4 minutes until the skin is crispy and golden.

Flip the fillets over and brush the miso glaze on the top and sides of each fillet.

Transfer the skillet to the preheated oven and bake for 8-10 minutes, or until the fish is cooked through and the glaze is caramelized.

Remove from the oven and let the fish rest for a few minutes before serving.
