How To Make Lightly smoked salmon with orange & rhubarb salad

Ingredients
- 8 oz lightly smoked salmon
- 2 oranges, peeled and segmented
- 2 stalks of rhubarb, thinly sliced
- 1/4 red onion, thinly sliced
- 1/4 cup fresh mint leaves
- 1/4 cup fresh cilantro leaves
- 1 tbsp extra virgin olive oil
- 1 tbsp orange juice
- Salt and pepper to taste
Instructions

In a mixing bowl, combine orange segments, rhubarb slices, red onion, mint leaves, and cilantro leaves.

In a separate small bowl, whisk together olive oil, orange juice, salt, and pepper.

Pour the dressing over the salad ingredients and toss gently to combine.

Heat a grill pan or skillet over medium heat. Place the lightly smoked salmon on the pan and cook for 2-3 minutes on each side until lightly charred and heated through.

Remove the salmon from heat and let it cool slightly. Flake the salmon into bite-sized pieces.

Divide the salad mixture onto plates and top with flaked salmon.
