Ingredients

  • 8 oz lightly smoked salmon
  • 2 oranges, peeled and segmented
  • 2 stalks of rhubarb, thinly sliced
  • 1/4 red onion, thinly sliced
  • 1/4 cup fresh mint leaves
  • 1/4 cup fresh cilantro leaves
  • 1 tbsp extra virgin olive oil
  • 1 tbsp orange juice
  • Salt and pepper to taste

Instructions

  1. In a mixing bowl, combine orange segments, rhubarb slices, red onion, mint leaves, and cilantro leaves.

  2. In a separate small bowl, whisk together olive oil, orange juice, salt, and pepper.

  3. Pour the dressing over the salad ingredients and toss gently to combine.

  4. Heat a grill pan or skillet over medium heat. Place the lightly smoked salmon on the pan and cook for 2-3 minutes on each side until lightly charred and heated through.

  5. Remove the salmon from heat and let it cool slightly. Flake the salmon into bite-sized pieces.

  6. Divide the salad mixture onto plates and top with flaked salmon.

  7. Serve immediately and enjoy!
