Ingredients

  • 4 bass fillets
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • For the Sauce Vierge:
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon lemon juice
  • 1 tablespoon chopped fresh parsley
  • 1 tablespoon chopped fresh basil
  • 1 tablespoon chopped fresh chives
  • 1 tablespoon chopped fresh thyme
  • 1 garlic clove, minced
  • Salt and pepper to taste

Instructions

  1. Preheat the grill to medium-high heat.

  2. Brush each bass fillet with olive oil and season with salt and pepper on both sides.

  3. Place the fillets on the grill and cook for 4-5 minutes per side, or until the fish is opaque and flakes easily with a fork.

  4. Meanwhile, in a small bowl, whisk together the extra virgin olive oil, lemon juice, chopped herbs, minced garlic, salt, and pepper to make the sauce vierge.

  5. Once the bass is cooked, remove it from the grill and place on a serving platter. Drizzle the sauce vierge over the top of each fillet.

  6. Serve the grilled bass with sauce vierge immediately and enjoy!
