How To Make Gravlox

Serves:

Ingredients

  • 1 lb fresh salmon fillet
  • 1/4 cup kosher or sea salt
  • 1/4 cup granulated sugar
  • 1 tbsp coarsely ground black pepper
  • 2 tbsp chopped fresh dill
  • 1 lemon, sliced

Instructions

  1. In a small bowl, mix together the salt, sugar, and black pepper.

  2. Place the salmon fillet skin-side down on a large piece of plastic wrap.

  3. Sprinkle the salt-sugar mixture evenly over the salmon, then sprinkle with the fresh dill.

  4. Place the lemon slices on top of the dill.

  5. Wrap the salmon tightly in the plastic wrap, making sure it is fully covered.

  6. Place the wrapped salmon in a shallow dish and place a heavy object, such as a foil-wrapped brick or a cutting board weighted with cans, on top of it.

  7. Refrigerate the salmon for 24 hours, flipping it over every 8 hours to ensure even curing.

  8. After 24 hours, remove the salmon from the refrigerator and carefully unwrap it.

  9. Rinse the salmon thoroughly under cold water to remove the excess salt and sugar.

  10. Pat the salmon dry with paper towels.

  11. Slice the gravlox thinly and serve chilled.
