Ingredients

  • 4 salmon fillets
  • 2 tablespoons olive oil
  • 1 lemon, sliced
  • 4 sprigs fresh dill
  • 4 sprigs fresh thyme
  • 1 zucchini, sliced
  • 1 red bell pepper, sliced
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).

  2. Cut 4 large squares of parchment paper, enough to enclose each salmon fillet.

  3. Place a salmon fillet on each parchment paper square.

  4. Drizzle each fillet with olive oil and season with salt and pepper.

  5. Top each fillet with lemon slices, dill sprigs, and thyme sprigs.

  6. Arrange zucchini and bell pepper slices around the salmon fillets.

  7. Fold the parchment paper over the salmon and vegetables, starting at one end and making small folds until the package is sealed.

  8. Place the parchment parcels on a baking sheet and bake for 20 minutes, or until the salmon is cooked through.

  9. Carefully unwrap the parchment paper, transfer the salmon and vegetables to serving plates, and serve hot.
