How To Make Braised Squid with Fennel & Tomatoes

Ingredients
- 1 lb squid, cleaned and cut into rings
- 1 fennel bulb, thinly sliced
- 2 cloves of garlic, minced
- 1 onion, chopped
- 1 can (14 oz) diced tomatoes
- 1/2 cup white wine
- 1/2 cup chicken broth
- 1 tsp dried oregano
- 1 tsp dried thyme
- Salt and pepper to taste
- Fresh parsley, chopped for garnish
Instructions

Heat some oil in a large skillet over medium heat. Add the onions, garlic, and fennel. Cook until softened.

Add the squid rings to the skillet and cook for about 2 minutes until they start to turn opaque.

Pour in the white wine and cook for another minute to reduce.

Add the diced tomatoes, chicken broth, oregano, thyme, salt, and pepper. Stir to combine.

Reduce the heat to low, cover, and simmer for 30 minutes, stirring occasionally.

Remove the lid and continue simmering for 10-15 more minutes until the sauce thickens.

Serve the braised squid over a bed of cooked rice or pasta. Garnish with fresh parsley.
