Ingredients

  • 2 large aubergines, cut into bite-sized chunks
  • 1 onion, thinly sliced
  • 1 red bell pepper, sliced
  • 3 cloves of garlic, minced
  • 1-inch piece of ginger, grated
  • 3 tablespoons of soy sauce
  • 2 tablespoons of rice vinegar
  • 2 tablespoons of ketchup
  • 1 tablespoon of brown sugar
  • 1 tablespoon of cornstarch
  • Vegetable oil for frying
  • Salt and pepper to taste
  • Cooked rice, to serve

Instructions

  1. Heat vegetable oil in a large pan over medium-high heat. Fry the aubergine chunks in batches until they are golden brown and crispy. Remove from the pan and set aside.

  2. In the same pan, add a little more oil if needed and sauté the sliced onions, red bell pepper, garlic, and ginger until they are soft and fragrant.

  3. In a small bowl, whisk together soy sauce, rice vinegar, ketchup, brown sugar, and cornstarch until well blended. Pour this sauce mixture into the pan with the sautéed vegetables.

  4. Add the fried aubergine back into the pan and stir everything together to coat the aubergine pieces with the sauce. Cook for an additional 2-3 minutes until the sauce thickens and the aubergines are heated through.

  5. Season with salt and pepper to taste.

  6. Serve the sweet and sour aubergines over cooked rice. Enjoy!
