Ingredients

  • 2 cans of tuna, drained
  • 1/4 cup mayonnaise
  • 1/4 cup diced red onion
  • 2 tablespoons chopped dill pickles
  • 1 tablespoon Dijon mustard
  • 1 teaspoon lemon juice
  • 1/4 teaspoon black pepper
  • 8 slices of your favorite bread
  • 4 slices of cheddar cheese
  • 2 tablespoons butter, softened

Instructions

  1. In a bowl, combine the tuna, mayonnaise, red onion, pickles, Dijon mustard, lemon juice, and black pepper. Mix well.

  2. Spread butter on one side of each bread slice. Place 4 slices butter-side down on a griddle or panini press.

  3. Divide the tuna mixture evenly among the 4 slices of bread. Top with a slice of cheddar cheese and another slice of bread, butter-side up.

  4. Cook the sandwiches on the griddle or panini press until the bread is golden brown and the cheese is melted, about 3-4 minutes per side.

  5. Remove from heat and let cool for a minute before slicing. Serve hot.
