Ingredients
- 2 cans of tuna, drained
- 1/4 cup mayonnaise
- 1/4 cup diced red onion
- 2 tablespoons chopped dill pickles
- 1 tablespoon Dijon mustard
- 1 teaspoon lemon juice
- 1/4 teaspoon black pepper
- 8 slices of your favorite bread
- 4 slices of cheddar cheese
- 2 tablespoons butter, softened

In a bowl, combine the tuna, mayonnaise, red onion, pickles, Dijon mustard, lemon juice, and black pepper. Mix well.

Spread butter on one side of each bread slice. Place 4 slices butter-side down on a griddle or panini press.

Divide the tuna mixture evenly among the 4 slices of bread. Top with a slice of cheddar cheese and another slice of bread, butter-side up.

Cook the sandwiches on the griddle or panini press until the bread is golden brown and the cheese is melted, about 3-4 minutes per side.

Remove from heat and let cool for a minute before slicing. Serve hot.
