Ingredients

  • 1 loaf of Italian bread
  • 1/2 cup of green olives, pitted and chopped
  • 1/2 cup of black olives, pitted and chopped
  • 1/4 cup of roasted red peppers, chopped
  • 2 tablespoons of capers
  • 2 cloves of garlic, minced
  • 1/4 cup of olive oil
  • 8 slices of Genoa salami
  • 8 slices of ham
  • 8 slices of provolone cheese
  • 8 slices of mortadella
  • 8 slices of mozzarella cheese

Instructions

  1. Slice the Italian bread in half horizontally.

  2. In a bowl, mix together the green olives, black olives, roasted red peppers, capers, minced garlic, and olive oil to make the olive salad.

  3. Spread a generous amount of the olive salad on the bottom half of the bread.

  4. Layer the Genoa salami, ham, provolone cheese, mortadella, and mozzarella cheese on top of the olive salad.

  5. Place the top half of the bread on top of the layered ingredients.

  6. Cut the sandwich into quarters and serve.
