  • 4 slices of whole wheat bread
  • 2 ripe avocados
  • 4 large eggs
  • Salt and pepper to taste
  • 1 tbsp of olive oil
  • 1 tbsp of lemon juice
  • 1/4 cup of diced tomatoes
  • 1/4 cup of diced red onions
  • Fresh cilantro for garnish

Instructions

  1. Toast the whole wheat bread slices until golden brown.

  2. In a bowl, mash the ripe avocados with a fork. Add salt, pepper, and lemon juice. Mix well.

  3. In a non-stick pan, heat olive oil over medium heat. Crack the eggs into the pan and scramble them until cooked through.

  4. Spread the avocado mixture evenly onto the toasted bread slices.

  5. Divide the scrambled eggs among the bread slices, placing them on top of the avocado mixture.

  6. Sprinkle diced tomatoes and red onions over the eggs.

  7. Garnish with fresh cilantro.
