Ingredients

  • 300g prawns, peeled and deveined
  • 1 cup pomegranate seeds
  • 2 grapefruits, peeled and segmented
  • 4 cups mixed salad greens
  • 1/4 cup chopped fresh mint leaves
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup chopped red onion
  • 1/4 cup extra-virgin olive oil
  • 2 tablespoons fresh lemon juice
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the prawns, pomegranate seeds, grapefruit slices, salad greens, mint, cilantro, and red onion.

  2. In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper.

  3. Pour the dressing over the salad and toss well to coat.

  4. Serve immediately and enjoy!
