Ingredients

  • 1 bunch kale, stems removed and leaves chopped
  • 1 avocado, diced
  • 1/2 cup dried cranberries
  • 1/2 cup sliced almonds
  • 1/4 cup olive oil
  • 1/4 cup apple cider vinegar
  • 1 tbsp honey
  • salt and pepper to taste

Instructions

  1. In a large bowl, add kale and massage it with your hands to soften it.

  2. Add diced avocado, dried cranberries, and sliced almonds to the bowl.

  3. In a small bowl, whisk together olive oil, apple cider vinegar, honey, salt, and pepper.

  4. Pour dressing over salad and toss to coat. Serve immediately.
