How To Make Winter Brussels Sprouts Salad
A healthy and flavorful salad perfect for winter with tender Brussels sprouts, dried cranberries and nuts.
Serves:
Ingredients
- 1 lb Brussels sprouts, trimmed and halved
- 2 tbsp olive oil
- Salt and pepper to taste
- 1/4 cup dried cranberries
- 1/4 cup chopped walnuts
- 2 tbsp apple cider vinegar
- 2 tbsp honey
- 1/4 cup crumbled feta cheese
Instructions

Preheat oven to 400°F.

Toss Brussels sprouts with olive oil, salt, and pepper. Roast in the oven for 10-15 minutes, until tender and slightly browned.

In a small bowl, whisk together apple cider vinegar and honey to make the dressing.

In a large bowl, combine roasted Brussels sprouts, dried cranberries, and walnuts. Drizzle dressing over the salad and toss to coat.

Sprinkle crumbled feta cheese on top.
