How To Make Winter Brussels Sprouts Salad

A healthy and flavorful salad perfect for winter with tender Brussels sprouts, dried cranberries and nuts.

Ingredients

  • 1 lb Brussels sprouts, trimmed and halved
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 1/4 cup dried cranberries
  • 1/4 cup chopped walnuts
  • 2 tbsp apple cider vinegar
  • 2 tbsp honey
  • 1/4 cup crumbled feta cheese

Instructions

  1. Preheat oven to 400°F.

  2. Toss Brussels sprouts with olive oil, salt, and pepper. Roast in the oven for 10-15 minutes, until tender and slightly browned.

  3. In a small bowl, whisk together apple cider vinegar and honey to make the dressing.

  4. In a large bowl, combine roasted Brussels sprouts, dried cranberries, and walnuts. Drizzle dressing over the salad and toss to coat.

  5. Sprinkle crumbled feta cheese on top.

  6. Serve and enjoy!
