  • 8 bone-in, skin-on chicken thighs
  • 1 lb new potatoes, quartered
  • 1 bunch asparagus, trimmed
  • 4 cloves garlic, minced
  • 2 tbsp fresh rosemary, chopped
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 425°F (220°C).

  2. In a large bowl, toss the chicken thighs, potatoes, asparagus, garlic, rosemary, olive oil, salt, and pepper until well coated.

  3. Arrange the chicken thighs, potatoes, and asparagus on a baking sheet in a single layer.

  4. Roast in the preheated oven for 35-40 minutes, or until the chicken is cooked through and the potatoes are crispy.

  5. Serve hot and enjoy!
