How To Make Warm Chicken & Ciabatta Salad

Ingredients
- 2 chicken breasts
- 4 cups mixed salad greens
- 1 ciabatta loaf
- 1 red bell pepper, sliced
- 1 red onion, thinly sliced
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1 tablespoon balsamic vinegar
Instructions

Preheat the oven to 400°F (200°C).

Season the chicken breasts with salt and pepper. Heat 1 tablespoon of olive oil in a skillet over medium heat. Cook the chicken breasts for 6-8 minutes per side, or until cooked through. Remove from heat and let rest for 5 minutes. Slice into strips.

While the chicken is resting, cut the ciabatta into bite-sized pieces. Toss with 1 tablespoon of olive oil, salt, and pepper. Place on a baking sheet and bake for 10-12 minutes, or until crispy.

In a large bowl, combine the salad greens, sliced bell pepper, and red onion.

In a small bowl, whisk together the remaining tablespoon of olive oil and balsamic vinegar. Season with salt and pepper.

Add the chicken and ciabatta to the salad bowl. Drizzle the dressing over the top and toss to combine.

Serve the warm chicken and ciabatta salad immediately.
