- 8 cups fresh spinach leaves
- 1 cup cherry tomatoes, halved
- 1 small red onion, thinly sliced
- 1 cucumber, sliced
- 1/2 cup crumbled feta cheese
- 1/4 cup chopped walnuts
- 2 tablespoons sunflower seeds
- 1/4 cup extra virgin olive oil
- 2 tablespoons red wine vinegar
- 1 teaspoon Dijon mustard
- Salt and pepper to taste
Instructions

In a large bowl, combine the spinach, cherry tomatoes, red onion, cucumber, feta cheese, walnuts, and sunflower seeds.

In a separate small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, salt, and pepper to make the dressing.
