  • 8 cups fresh spinach leaves
  • 1 cup cherry tomatoes, halved
  • 1 small red onion, thinly sliced
  • 1 cucumber, sliced
  • 1/2 cup crumbled feta cheese
  • 1/4 cup chopped walnuts
  • 2 tablespoons sunflower seeds
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the spinach, cherry tomatoes, red onion, cucumber, feta cheese, walnuts, and sunflower seeds.

  2. In a separate small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, salt, and pepper to make the dressing.
