  • 2 chicken breasts, cooked and diced
  • 1 ripe mango, peeled and diced
  • 1 jalapeño, seeds removed and finely chopped
  • 1/4 cup red onion, finely chopped
  • 1/4 cup cilantro, chopped
  • 2 tablespoons lime juice
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper

Instructions

  1. In a large mixing bowl, combine the diced chicken, mango, jalapeño, red onion, and cilantro.

  2. In a small bowl, whisk together the lime juice, olive oil, salt, black pepper, and cayenne pepper.

  3. Pour the dressing over the chicken mixture and toss to coat evenly.

  4. Let the salad sit for 10 minutes to allow the flavors to meld together.
