How To Make Smoky Aubergine & Red Pepper Salad

Ingredients
- 2 aubergines
- 2 red peppers
- 2 tbsp olive oil
- 1 tsp cumin powder
- 1 tsp paprika
- 1/2 tsp smoked paprika
- 2 cloves garlic, minced
- Juice of 1 lemon
- Salt and pepper to taste
- Fresh parsley, for garnish
Instructions

Preheat the oven to 200°C (400°F).

Slice the aubergines and red peppers into thin strips.

In a bowl, mix together the olive oil, cumin powder, paprika, smoked paprika, minced garlic, lemon juice, salt, and pepper.

Toss the aubergine and red pepper slices in the spice mixture until well coated.

Spread the coated slices onto a baking tray and roast in the preheated oven for 15-20 minutes, or until tender and slightly charred.

Remove from the oven and let cool for a few minutes.

Transfer the roasted aubergine and red pepper slices to a serving platter.

Garnish with fresh parsley and serve.
