How To Make Roasted Beets with Feta Recipe

Ingredients
- 4 medium beets, peeled and diced
- 2 tablespoons olive oil
- 1 teaspoon dried thyme
- Salt and pepper, to taste
- 1/2 cup crumbled feta cheese
- Fresh parsley, for garnish
Instructions

Preheat the oven to 400°F (200°C).

In a large bowl, toss the beets with olive oil, dried thyme, salt, and pepper.

Spread the beets out on a baking sheet and roast for 40-45 minutes, or until tender.

Remove from the oven and let cool slightly.

Transfer the roasted beets to a serving dish and sprinkle with crumbled feta cheese.

Garnish with fresh parsley and serve.
