Ingredients

  • 4 medium beets, peeled and diced
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • Salt and pepper, to taste
  • 1/2 cup crumbled feta cheese
  • Fresh parsley, for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).

  2. In a large bowl, toss the beets with olive oil, dried thyme, salt, and pepper.

  3. Spread the beets out on a baking sheet and roast for 40-45 minutes, or until tender.

  4. Remove from the oven and let cool slightly.

  5. Transfer the roasted beets to a serving dish and sprinkle with crumbled feta cheese.

  6. Garnish with fresh parsley and serve.
