How To Make Feta & Beetroot Salad

Ingredients
- 4 medium beets, roasted and chopped
- 1 cup crumbled feta cheese
- 2 cups mixed salad greens
- 1/4 cup chopped walnuts
- 2 tablespoons balsamic vinegar
- 2 tablespoons extra virgin olive oil
- Salt and pepper to taste
Instructions

Preheat the oven to 400°F (200°C). Wrap the beets in aluminum foil and place them on a baking sheet. Roast for 45 minutes or until tender. Let them cool, then peel and chop into bite-sized pieces.

In a large salad bowl, combine the chopped beets, crumbled feta cheese, mixed salad greens, and chopped walnuts.

In a small bowl, whisk together the balsamic vinegar, olive oil, salt, and pepper. Drizzle the dressing over the salad and toss to combine.

Serve the salad chilled or at room temperature.
