How To Make Feta & Beetroot Salad

Ingredients

  • 4 medium beets, roasted and chopped
  • 1 cup crumbled feta cheese
  • 2 cups mixed salad greens
  • 1/4 cup chopped walnuts
  • 2 tablespoons balsamic vinegar
  • 2 tablespoons extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C). Wrap the beets in aluminum foil and place them on a baking sheet. Roast for 45 minutes or until tender. Let them cool, then peel and chop into bite-sized pieces.

  2. In a large salad bowl, combine the chopped beets, crumbled feta cheese, mixed salad greens, and chopped walnuts.

  3. In a small bowl, whisk together the balsamic vinegar, olive oil, salt, and pepper. Drizzle the dressing over the salad and toss to combine.

  4. Serve the salad chilled or at room temperature.
