How To Make Roasted Beets, Plum & Pecan Salad

Ingredients
- 4 medium beets, roasted and sliced
- 2 plums, sliced
- 1/2 cup pecans, toasted
- 4 cups mixed greens
- 1/4 cup crumbled feta cheese
- 2 tablespoons balsamic vinegar
- 1 tablespoon honey
- 2 tablespoons olive oil
- salt and pepper to taste
Instructions

Preheat the oven to 400°F (200°C). Wrap the beets in foil and roast for 45 minutes or until fork-tender. Let them cool, then peel and slice.

In a large bowl, combine the beets, plums, pecans, mixed greens, and feta cheese.

In a small bowl, whisk together the balsamic vinegar, honey, olive oil, salt, and pepper to make the dressing.

Drizzle the dressing over the salad and toss to combine.
