Ingredients

  • 4 medium beets, roasted and sliced
  • 2 plums, sliced
  • 1/2 cup pecans, toasted
  • 4 cups mixed greens
  • 1/4 cup crumbled feta cheese
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon honey
  • 2 tablespoons olive oil
  • salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C). Wrap the beets in foil and roast for 45 minutes or until fork-tender. Let them cool, then peel and slice.

  2. In a large bowl, combine the beets, plums, pecans, mixed greens, and feta cheese.

  3. In a small bowl, whisk together the balsamic vinegar, honey, olive oil, salt, and pepper to make the dressing.

  4. Drizzle the dressing over the salad and toss to combine.

  5. Serve the salad immediately and enjoy!
