How To Make Hot Beetroot Salad

Ingredients

  • 4 medium beets, trimmed and peeled
  • 2 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • 1 tsp honey
  • 1/4 cup crumbled feta cheese
  • 2 tbsp chopped walnuts
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).

  2. Cut the beets into quarters and place them on a baking sheet. Drizzle with olive oil and sprinkle with salt and pepper.

  3. Roast the beets in the preheated oven for 35-45 minutes, or until they are tender.

  4. In a small bowl, whisk together balsamic vinegar, honey, and a pinch of salt.

  5. Remove the beets from the oven and let them cool slightly. Slice them into thin wedges.

  6. In a large bowl, combine the roasted beets, feta cheese, and walnuts. Pour the dressing over the salad and toss gently.

  7. Garnish with fresh parsley and serve warm or at room temperature.
