How To Make Hot Beetroot Salad

Ingredients
- 4 medium beets, trimmed and peeled
- 2 tbsp olive oil
- 1 tbsp balsamic vinegar
- 1 tsp honey
- 1/4 cup crumbled feta cheese
- 2 tbsp chopped walnuts
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions

Preheat the oven to 400°F (200°C).

Cut the beets into quarters and place them on a baking sheet. Drizzle with olive oil and sprinkle with salt and pepper.

Roast the beets in the preheated oven for 35-45 minutes, or until they are tender.

In a small bowl, whisk together balsamic vinegar, honey, and a pinch of salt.

Remove the beets from the oven and let them cool slightly. Slice them into thin wedges.

In a large bowl, combine the roasted beets, feta cheese, and walnuts. Pour the dressing over the salad and toss gently.

Garnish with fresh parsley and serve warm or at room temperature.
