How To Make Indian Rice Salad with Chicken

Ingredients
- 1 cup basmati rice
- 2 cups water
- 1 lb chicken breast, cooked and diced
- 1/2 cup cucumber, diced
- 1/2 cup cherry tomatoes, halved
- 1/4 cup red onion, finely chopped
- 2 tablespoons fresh cilantro, chopped
- 2 tablespoons fresh mint, chopped
- 1 tablespoon olive oil
- 1 tablespoon lemon juice
- 1 teaspoon ground cumin
- 1/2 teaspoon ground coriander
- 1/4 teaspoon turmeric
- Salt and pepper to taste
Instructions

In a medium saucepan, bring water to a boil. Add basmati rice and cook according to package instructions. Once cooked, fluff with a fork and let it cool.

In a large mixing bowl, combine the cooked rice, diced chicken, cucumber, cherry tomatoes, red onion, cilantro, and mint.

In a small bowl, whisk together the olive oil, lemon juice, ground cumin, ground coriander, turmeric, salt, and pepper. Pour the dressing over the salad and toss well to combine.

Serve the Indian rice salad chilled and garnish with additional fresh herbs if desired.
