How To Make Biryani

Ingredients

  • 2 cups basmati rice
  • 500g chicken, cut into pieces
  • 2 onions, thinly sliced
  • 2 tomatoes, chopped
  • 4 cloves garlic, minced
  • 2-inch piece ginger, grated
  • 2 green chilies, slit
  • 1/2 cup plain yogurt
  • 1/4 cup chopped mint leaves
  • 1/4 cup chopped coriander leaves
  • 2 tsp Biryani masala powder
  • 1 tsp turmeric powder
  • 1 tsp red chili powder
  • 1/2 tsp garam masala powder
  • 3 tbsp ghee or oil
  • Salt to taste
  • 4 cups water

Instructions

  1. Rinse the basmati rice under cold water until the water runs clear. Soak the rice in water for 30 minutes, then drain.

  2. Heat ghee or oil in a large pot over medium heat. Add the sliced onions and cook until golden brown. Remove half of the onions and set aside for garnishing.

  3. In the same pot, add the minced garlic, grated ginger, and slit green chilies. Sauté for 1-2 minutes until fragrant.

  4. Add the chicken pieces to the pot and cook until browned on all sides.

  5. Add the chopped tomatoes, yogurt, mint leaves, coriander leaves, Biryani masala powder, turmeric powder, red chili powder, garam masala powder, and salt. Mix well to combine.

  6. Add the drained basmati rice to the pot and gently mix it with the chicken and spices.

  7. Pour in the water and bring to a boil. Reduce the heat to low, cover the pot with a tight-fitting lid, and simmer for 20 minutes or until the rice is cooked and the chicken is tender.

  8. Fluff the rice with a fork and garnish with the reserved fried onions.

  9. Serve hot with raita or salad.
