How To Make Autumn Piccalilli with Pear

Ingredients
- 2 ripe pears, peeled and diced
- 1 small cauliflower, cut into florets
- 1 small butternut squash, peeled and diced
- 1 red bell pepper, diced
- 1 small red onion, finely chopped
- 3 cloves of garlic, minced
- 1 cup apple cider vinegar
- 1 cup white sugar
- 2 tsp mustard seeds
- 1 tsp ground turmeric
- 1 tsp ground ginger
- 1 tsp salt
Instructions

In a large pot, combine the pears, cauliflower, butternut squash, bell pepper, red onion, and garlic.

In a separate saucepan, combine the apple cider vinegar, sugar, mustard seeds, turmeric, ginger, and salt. Bring to a boil, then reduce heat and let simmer for 5 minutes.

Pour the vinegar mixture over the pear and vegetable mixture in the pot. Stir to combine.

Bring the mixture to a boil over medium-high heat, then reduce heat and let simmer for 20 minutes, or until the vegetables are tender and the liquid has thickened.

Remove from heat and let cool before transferring to sterilized jars.

Seal the jars and store in a cool, dark place for at least 2 weeks before serving.
