Ingredients

  • 8 oz pasta
  • 1/4 cup olive oil
  • 1/4 cup lemon juice
  • 1 tbsp lemon pepper seasoning
  • 1/2 cup cherry tomatoes, halved
  • 1/2 cup cucumber, chopped
  • 1/4 cup red onion, chopped
  • 1/4 cup parsley, chopped
  • Salt and black pepper to taste

Instructions

  1. Cook pasta according to package directions, drain and rinse with cold water.

  2. In a large bowl, whisk together olive oil, lemon juice, and lemon pepper seasoning.

  3. Add cooked pasta, cherry tomatoes, cucumber, red onion, parsley, salt, and black pepper. Toss to combine.

  4. Chill in the refrigerator for at least 1 hour before serving.
