How To Make Antipasto Pasta Salad Recipe

A refreshing pasta salad with a Mediterranean twist.

Serves:

Ingredients

  • 8 oz. fusilli pasta
  • 1/4 cup red wine vinegar
  • 1/4 cup olive oil
  • 1/2 tsp dried oregano
  • 1/4 tsp red pepper flakes
  • 1/4 cup sliced black olives
  • 1/4 cup chopped roasted red peppers
  • 1/4 cup chopped pepperoncini
  • 1/4 cup cubed salami
  • 1/4 cup cubed provolone cheese
  • Salt and pepper, to taste
  • Fresh parsley, chopped, for garnish

Instructions

  1. Cook fusilli pasta according to package instructions until al dente. Rinse under cold water and set aside.

  2. In a small bowl, whisk together red wine vinegar, olive oil, oregano, and red pepper flakes.

  3. In a large bowl, combine cooked pasta, black olives, roasted red peppers, pepperoncini, salami, and provolone cheese. Pour dressing over pasta salad and toss to coat.

  4. Season with salt and pepper to taste. Garnish with fresh parsley.
