How To Make Pasta Salad with Pesto & Prawns

Ingredients
- 250g pasta
- 200g prawns, peeled and deveined
- 1 cup cherry tomatoes, halved
- 1/2 cup red onion, thinly sliced
- 1/2 cup black olives, sliced
- 1/4 cup pine nuts, toasted
- 1/4 cup grated Parmesan cheese
- 2 cups fresh basil leaves
- 3 cloves garlic
- 1/4 cup olive oil
- Juice of 1 lemon
- Salt and pepper to taste
Instructions

Cook the pasta according to package instructions. Drain and rinse with cold water.

In a large skillet, heat some olive oil over medium heat. Add the prawns and cook until pink and cooked through, about 3-4 minutes. Remove from heat and set aside.

In a food processor, combine basil, garlic, pine nuts, Parmesan cheese, lemon juice, and olive oil. Blend until smooth.

In a large bowl, combine the cooked pasta, cooked prawns, cherry tomatoes, red onion, black olives, and pesto dressing. Toss gently to coat everything evenly.

Season with salt and pepper to taste. Serve chilled.
