How To Make Mixed Baby Greens with Gorgonzola and Pecans
These light mixed baby greens is packed with crumbled gorgonzola and crunchy pecans, all coated in a pomegranate vinaigrette, for a refreshing meal!

- 5cupsmixed baby greens
- 5cupsBaby Arugula bunch
- 1cuppomegranate seeds
- 2ozpecans,(about 28 halves), chopped
- ½cupGorgonzola cheese,crumbled
For Pomegranate Vinaigrette:
- 5tbsppomegranate juice
- 3tbspchampagne vinegar
- 1tbspshallot,finely minced
- 1tbsphoney
- 5tbspextra virgin olive oil
- salt and fresh pepper
Instructions

Combine the pomegranate juice, olive oil, vinegar, honey, salt, and pepper in a small glass jar, then shake vigorously.

Toss the mixed greens and baby arugula in a salad bowl, then top with pecans, gorgonzola and pomegranate seeds.
