These light mixed baby greens is packed with crumbled gorgonzola and crunchy pecans, all coated in a pomegranate vinaigrette, for a refreshing meal!

Ingredients

  • 5cupsmixed baby greens
  • 5cupsBaby Arugula bunch
  • 1cuppomegranate seeds
  • 2ozpecans,(about 28 halves), chopped
  • ½cupGorgonzola cheese,crumbled

For Pomegranate Vinaigrette:

  • 5tbsppomegranate juice
  • 3tbspchampagne vinegar
  • 1tbspshallot,finely minced
  • 1tbsphoney
  • 5tbspextra virgin olive oil
  • salt and fresh pepper

Instructions

  1. Combine the pomegranate juice, olive oil, vinegar, honey, salt, and pepper in a small glass jar, then shake vigorously.

  2. Toss the mixed greens and baby arugula in a salad bowl, then top with pecans, gorgonzola and pomegranate seeds.

  3. Drizzle with vinaigrette, serve, and enjoy!
