Ingredients

  • 2 cucumbers, sliced
  • 2 tomatoes, diced
  • 1 red onion, thinly sliced
  • 1 bell pepper, thinly sliced
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 tablespoon lemon juice
  • 1 garlic clove, minced
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a large bowl, combine cucumbers, tomatoes, red onion, and bell pepper.

  2. In a separate small bowl, whisk together olive oil, red wine vinegar, lemon juice, garlic, dried oregano, salt, and pepper.

  3. Pour the marinade over the vegetable mixture and toss until well coated.

  4. Cover the bowl with plastic wrap and let it marinate in the refrigerator for at least 1 hour.

  5. Before serving, garnish with fresh parsley.
