Ingredients

  • 4 cups of stale bread, cubed
  • 2 cups of tomatoes, diced
  • 1 cup of cucumber, diced
  • 1/2 cup of red onion, thinly sliced
  • 1/4 cup of fresh basil, chopped
  • 2 cloves of garlic, minced
  • 1/4 cup of extra virgin olive oil
  • 2 tablespoons of red wine vinegar
  • Salt and black pepper to taste

Instructions

  1. In a large bowl, combine the bread, tomatoes, cucumber, red onion, and basil.

  2. In a small bowl, whisk together the minced garlic, olive oil, vinegar, salt, and black pepper.

  3. Pour the dressing over the bread mixture and toss well to combine.

  4. Let the salad sit for at least 10 minutes to allow the flavors to meld together.

  5. Serve the Panzanella salad chilled or at room temperature.
