How To Make Roasted Pepper Salad with Capers & Pine Nuts

Ingredients
- 4 large red bell peppers
- 2 tbsp extra virgin olive oil
- 2 tbsp balsamic vinegar
- 2 tbsp capers, drained
- 2 tbsp pine nuts, toasted
- Salt and pepper to taste
- Fresh basil leaves, for garnish
Instructions

Preheat the oven to 400°F (200°C).

Place the bell peppers on a baking sheet and roast them for 20-25 minutes, or until the skin is charred and blistered.

Remove the peppers from the oven and place them in a bowl. Cover the bowl with plastic wrap and let them steam for 10 minutes.

Once cooled, peel off the skin, remove the stems and seeds, and slice the peppers into thin strips.

In a large bowl, whisk together the olive oil, balsamic vinegar, salt, and pepper.

Add the roasted pepper strips, capers, and toasted pine nuts to the bowl. Toss well to combine.

Garnish with fresh basil leaves and serve.
