How To Make Build Your Own Pesto Pasta Salad

Ingredients
- 8 oz pasta (penne, fusilli, or your choice)
- 1 cup cherry tomatoes, halved
- 1 cup fresh mozzarella cheese, cubed
- 1/2 cup Kalamata olives, pitted and halved
- 1/4 cup red onion, thinly sliced
- 1/4 cup fresh basil leaves, chopped
- 1/4 cup pine nuts, toasted
- pesto dressing:
- 2 cups fresh basil leaves
- 2 cloves garlic
- 1/4 cup pine nuts
- 1/2 cup grated Parmesan cheese
- 1/2 cup olive oil
- 1 tablespoon lemon juice
- Salt and pepper to taste
Instructions

Cook the pasta according to package instructions. Drain and rinse with cold water.

In a blender or food processor, combine the basil leaves, garlic, pine nuts, Parmesan cheese, olive oil, lemon juice, salt, and pepper. Blend until smooth to make the pesto dressing.

In a large bowl, combine the cooked pasta, cherry tomatoes, mozzarella cheese, Kalamata olives, red onion, and basil leaves.

Pour the pesto dressing over the pasta salad and toss until well coated.

Sprinkle toasted pine nuts over the top.

Serve immediately or refrigerate until ready to serve. Enjoy!
