Ingredients

  • 4 boneless, skinless chicken breasts
  • 1/4 cup honey
  • 2 tablespoons soy sauce
  • 2 tablespoons sesame oil
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 2 tablespoons sesame seeds
  • 2 peaches, sliced
  • 1 cucumber, sliced
  • 2 tablespoons rice vinegar
  • Salt and pepper, to taste

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.

  2. In a small bowl, whisk together the honey, soy sauce, sesame oil, minced garlic, and grated ginger. Set aside.

  3. Season the chicken breasts with salt and pepper, then place them on the prepared baking sheet.

  4. Brush the honey sesame glaze onto the chicken, ensuring they are completely coated. Sprinkle sesame seeds on top.

  5. Bake the chicken for 20 minutes or until cooked through, flipping halfway through and brushing with more glaze.

  6. Meanwhile, in a large bowl, combine the sliced peaches, cucumber, rice vinegar, and a pinch of salt and pepper. Toss well to coat.

  7. Serve the honeyed sesame chicken alongside the peach and cucumber salad. Enjoy!
