  • 4 cups broccoli florets
  • 1 cup shredded carrots
  • 1/2 cup thinly sliced red onion
  • 1/2 cup chopped red bell pepper
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup mayonnaise
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon honey
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. In a large mixing bowl, combine the broccoli florets, shredded carrots, red onion, red bell pepper, and cilantro.

  2. In a small mixing bowl, whisk together the mayonnaise, apple cider vinegar, honey, salt, and black pepper until well combined.

  3. Pour the dressing over the vegetables and toss until evenly coated.

  4. Serve immediately or refrigerate for 1 hour to allow the flavors to combine.
