How To Make Roasted Cauli-Broc Bowl with Tahini Hummus

Ingredients
- 1 small head of cauliflower, cut into florets
- 1 small head of broccoli, cut into florets
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon paprika
- salt and pepper, to taste
- 1 cup cooked quinoa
- 1 cup tahini hummus
- 1/4 cup chopped fresh parsley
- 1 tablespoon lemon juice
Instructions

Preheat the oven to 425°F (220°C).

In a large bowl, toss together the cauliflower and broccoli florets with the olive oil, garlic powder, onion powder, paprika, salt, and pepper.

Spread the seasoned cauliflower and broccoli on a baking sheet in a single layer.

Roast in the preheated oven for 25-30 minutes, or until the vegetables are golden brown and tender.

In serving bowls, divide the cooked quinoa, roasted cauliflower, and broccoli.

Drizzle each bowl with tahini hummus.

Garnish with chopped fresh parsley and drizzle with lemon juice.
