Ingredients

  • 1 whole chicken (about 4 pounds)
  • 1 lemon, cut into wedges
  • 4 cloves of garlic, minced
  • 1/4 cup of Grappa
  • 2 tablespoons of olive oil
  • 1 teaspoon of dried rosemary
  • 1 teaspoon of dried thyme
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).

  2. Pat the chicken dry with paper towels and season generously with salt and pepper, inside and out.

  3. In a small bowl, mix together the minced garlic, Grappa, olive oil, rosemary, and thyme.

  4. Rub the chicken all over with the garlic and Grappa mixture, making sure to get some under the skin.

  5. Place the lemon wedges inside the cavity of the chicken.

  6. Tie the chicken legs together with kitchen twine and place the chicken on a roasting rack in a roasting pan.

  7. Roast the chicken for about 1 hour and 30 minutes, or until the internal temperature reaches 165°F (74°C) when checked with a meat thermometer.

  8. Remove the chicken from the oven and let it rest for 10-15 minutes before carving.

  9. Serve the roast chicken with the pan juices.
