- 1 whole chicken (about 4 pounds)
- 1 pound baby potatoes, halved
- 2 carrots, peeled and cut into chunks
- 1 red onion, cut into wedges
- 2 garlic cloves, minced
- 2 tablespoons olive oil
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper

Preheat the oven to 400°F (200°C).

Place the chicken, vegetables, and minced garlic on a large baking tray. Drizzle with olive oil and sprinkle with dried thyme, rosemary, oregano, salt, and black pepper. Toss everything together to coat evenly.

Roast in the preheated oven for 1 hour 30 minutes or until the chicken is cooked through and the vegetables are tender, stirring the vegetables halfway through.
