Ingredients

  • 1 whole chicken (about 3-4 pounds)
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 tablespoon dried thyme
  • 1 tablespoon dried rosemary
  • 1 tablespoon dried oregano
  • 1 tablespoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 lemon, sliced

Instructions

  1. Preheat the oven to 375°F (190°C).

  2. In a small bowl, mix together the minced garlic, dried thyme, dried rosemary, dried oregano, paprika, salt, and black pepper.

  3. Place the chicken on a baking dish and pat it dry with paper towels.

  4. Rub the olive oil all over the chicken, making sure to coat it evenly.

  5. Sprinkle the herb and spice mixture all over the chicken, rubbing it in to adhere.

  6. Place the lemon slices inside the chicken cavity.

  7. Roast the chicken in the preheated oven for about 1 hour and 30 minutes, or until the internal temperature reaches 165°F (74°C).

  8. Once cooked, remove the chicken from the oven and let it rest for about 10 minutes before carving.

  9. Serve the fragrant roast chicken with your favorite side dishes.
