How To Make Fragrant Crown Roast of Chicken with Sausage ‘Rolls’ & Maple Sweet Potatoes

Ingredients
- 1 crown roast of chicken
- 4 sausage links, casings removed
- 4 large sweet potatoes, peeled and cubed
- 1/4 cup maple syrup
- 2 cloves of garlic, minced
- 1 tsp dried rosemary
- 1 tsp dried thyme
- Salt and pepper to taste
Instructions

Preheat the oven to 375°F (190°C).

In a skillet, cook the sausage over medium heat until browned. Remove from heat and set aside.

In a large bowl, combine the sweet potatoes, maple syrup, garlic, rosemary, thyme, salt, and pepper. Toss until well coated.

Transfer the sweet potatoes to a roasting pan and spread them out in an even layer.

Place the crown roast of chicken on top of the sweet potatoes, with the bones facing up.

Fill the cavity of the chicken with the cooked sausage.

Roast in the oven for 1 hour and 30 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).

Remove from the oven and let it rest for 10 minutes before serving.

Slice the crown roast into individual chops and serve with the sausage ‘rolls’ and maple sweet potatoes.
